Pre-Fall Excitement and Dinner Menu

My favorite time of the year is fall!!!!

 I love apples, pumpkins, being outdoors, leaves falling from the trees,

fires out on the back porch, windows open to the house to let fresh air in, football,
and wearing a hooded sweatshirt and shorts and feeling perfectly content!

...and these are just a few of my favorite things! I use every thread of self control I can find not to start posting seasonal things about fall (which seems right around the corner for someone who can't wait!)

So, as a teaser...and it is totally legit because I bought it fresh at Whole Foods, so it must be "in season" enough....I am going to share  recipes for Pumpkin Tortellini, salad, Brussels sprouts, and seasoned mozzarella to make the perfect meal!
(serves 6):

Pumpkin Tortellini w/ homemade sauce

1 package pre-cooked pumpkin tortellini cooked per package instructions

Sauce (to coat tortellini):
Mix ingredients in sauce pan over medium heat
4 tbs butter
1/2 garlic clove minced small
1/2 tbs sage
1/8 tbs nutmeg
small splash of balsamic vinaigrette
introduce pre-warmed tortellini for 2-4 minutes to let butter sauce coat and absorb
minimal Parmesan cheese over the top once plated

Fresh chopped leafy green romaine lettuce (1 head)
1/4 orange bell pepper chopped
1/4 red bell pepper chopped
2 tbs. bleu cheese crumbles
1/8 cup roasted Pepitas (green pumpkin seeds)

serve with same balsamic vinaigrette from tortellini sauce


 Side Dish:
Caramelized Brussels Sprouts

1 pound small Brussels sprouts cut in half
lightly coat in olive oil, sea salt, fresh cracked pepper
cook slowly on medium heat until tender
once tender turn up the heat to medium high to brown and caramelize the sprouts (cook 2 minutes or so past my photo)


Side Dish (or appetizer):
olive oil  and seasoned "soaked" mozzarella with crustini crackers
