Sweet Potatoes


Rich in vitamins A, C, and E, sweet potatoes are chalk full of healthy goodness. They contain a large amount of vitamin B6 which is crucial in breaking down a substance called homocysteine, which contributes to hardening of the arteries and blood vessels. Vitamin B6 helps keep the walls of these important blood passageways flexible and healthy which allows blood to flow freely. In addition, sweet potatoes contain high amounts of potassium which helps lower blood pressure. Furthermore, sweet potatoes contain almost twice as much fiber as other types of potatoes and everyone knows how good fiber is!

The best thing about sweet potatoes however is that they are a great source of manganese which aids and activates the process of digestion, formation of healthy red blood cells, bone development, a plays a pivotal component in fat and carbohydrate metabolism.
They are also wonderful diverse for cooking with...you can make fries, soups, and even doughnuts with sweet potatoes.

Shannon and I love to make homemade sweet potato fries! You just peel and cut them and fry! Be careful to keep an eye on them though, they can burn quickly.

 You can also bake them. Put the sweet peeled and cut potatoes into a large bowl and add some olive or vegetable oil (1/8 cup per pound). Mix well to combine. Sprinkle with salt, sugar and spices of your choice. Use your hands to mix well, so all pieces are coated with oil and spices.Then spread the sweet potatoes out in a single layer on a baking sheet and bake at 450°F for a total of 25 to 30 minutes. After the first 15 minutes, remove the baking sheet from the oven and turn over all of the sweet potato pieces. Return to the oven and bake for another 10-15 minutes, or until they are well browned. Let cool for 5 minutes before serving.
