Leftover Ham Recipes

Like I mentioned in my Easter Dinner post, my family always has ham for Easter. I think that is pretty common. I like ham, but can get tired pretty quickly of ham leftovers. We usually freeze some and then I use it in recipes later. Here are a few of mine and Shannon's favorites.

Cheesy Ham and Sweet Potato Casserole

Serves 3

Ingredients:
1 large fresh sweet potato
1/8 cup butter
1/4 cup onion, chopped
1/8 cup flour
1/4 teaspoon salt
1/4 teaspoon basil, crushed
1/8 teaspoon dry mustard
1/8 teaspoon pepper
1 cups milk 
3/4 cups mozzarella cheese, shredded
1/4 cups sharp cheddar cheese, shredded
1/2 lb ham, cooked, cubed
1/ 4 cup crispy fried onions

Directions:
Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water until tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.

Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in the mozzarella cheese and the ham.

Pour half of mixture into greased 1 quart casserole. Arrange half of sweet potatoes on top. Repeat layers. Cover and bake at 350*F, 25 minutes. Sprinkle with remaining cheddar cheese and crispy onions. Then bake 3 to 4 minutes longer, or until cheese has melted.

White Bean Ham Chili

Ingredients:
2 cans of great northern beans (drained and rinsed)
1 can of navy beans (drained and rinsed)
ham bone, and 1 pound diced ham
1 chopped medium yellow onion (sauteed)
3 cups vegetable stock
3 cups chicken stock and/or ham juices with fat
1 TBS chili powder
2 TBS worcestershire sauce
salt & pepper to taste
3 bay leaves


Directions:
Drain and rinse the beans. Saute onion until translucent. Combine all ingredients except diced ham in crock-pot. Cover and cook on low about 6 hours. Remove ham bone. Add diced ham to the crock pot and cook for one more hour. Serve with cornbread.
