Easy Crock-Pot Beef Stroganoff

I love being able to just throw things in the crock pot and not have to worry about exact cooking time. With a baby it can be hard to get dinner ready, so this makes things much more simple for me. Here is my recipe for beef stroganoff in the crock-pot.

 Easy Crock-Pot Beef Stroganoff

Beef Roast
1/8 c All-purpose flour
2 tablespoons olive oil
2 tablespoons butter
1 medium onion, sliced
8 ounces fresh mushrooms, sliced
2 C beef broth
1 (10 3/4-ounce) can cream of mushroom soup
Salt and black pepper
1 cup sour cream
1/2pkg egg noodles

In a crock pot cook your roast in the beef broth, spice as desired. After cooking for 3 hours on high, Saute your onion for a few minutes, until the onion is tender. Add onions and mushrooms to the crock pot. Cook for another hour on high. Cut up roast in crock pot. Add the mushroom soup and egg noodles. Cook over low heat for about 30 minutes. Adjust seasoning to taste, adding salt and pepper, as needed. Stir in the flour and sour cream the last few minutes, right before you serve.
